Protein Pancakes (Makes 10 medium sized pancakes)

1/2 cup oat flour

1 scoop (30 g) of protein powder

3 large eggs

1/3 almond milk or 1/3 cup plain Greek yogurt

2 tbsp. of maple syrup

Whisk together the wet ingredients add the oat flour and protein powder. Preheat skillet on medium heat. Spray with cooking spray and cook the pancakes. Cook for less than a minute and flip when bubbles appear. Then cook the other side for 10 second more (2-3 tbsp. for medium pancake).

(If you use a vanilla protein powder you can skip the maple syrup)
