Mahi Mahi Bowl (1 serving)
4 oz. of Mahi Mahi
1 cup of kale
1/2 cup sweet potatoes
1/4 of avocado cut into cubes
Bake the Mahi Mahi at 380F for 20-25 minutes.
Bake or roast the sweet potatoes in the oven. Toss the kale on a skillet with 1 tsp. of olive oil and add the Mahi, sweet potatoes and veggies. Serve it warm with avocado cubes on top.
To make it vegetarian switch the Mahi with 1/2 cup any kind of beans.
