Frittata egg muffins
(makes 12 muffins. 2-3 muffins serving)
5 eggs
5 egg whites
1 chopped onion
1 cup chopped spinach
1 cup chopped tomato
1 cup chopped bell pepper
A pinch of salt and ground pepper
Preheat oven to 350 F.
Spray a muffin tray with cooking spray.
In a mixing bowl beat eggs, add egg whites, veggies, salt and pepper.
Mix well.
Pour mixer into the muffin tray and bake for 15-20 minutes.
